Preparation
§ Try new things by creating your own light and crispy batter with just plain flour and soda water. Simply take whatever you fancy, from pepper strips to prawns to green beans, and then sprinkle in flour. Mix in with a batter made from soda water and flour and shallow fry for a few seconds. Crispy and very tasty!
§ Having trouble with a flat soufflé? A simple cheat is to put the mix inside a cooked pancake, fold over and place in the oven. Serve as whole pudding with an orange and brandy syrup – delicious and really simple!
§ I always tell people to experiment with the food they serve at dinner parties; it’s boring to cook the same meals time and time again. Don’t be scared to try new things – for example learn to shuck (open) oysters. It’s really easy and they are perfect for serving in a fantastic seafood starter.
§ A handy tip when preparing fish is to remember to keep your fingers salted, which allows you to keep a good grip on the fish. Also, a little secret is to use a pair of tweezers to help you remove small bones from the fish – it works every time.
I love pancetta with a perfect poached egg for an interesting starter. To make your egg, ensure the water is hot and swirling at a fast pace before cracking it in. Don’t add salt as it will split the egg, instead a little vinegar or lemon will help keep the egg solid. Leave for three minutes then pop in cold water. If you have a lot of guests you can take the pressure off by preparing beforehand. Simply take the egg out of the boiling water a little earlier then pop back in during the evening for 30 seconds to re-heat ready for guests
It’s easy to make your chicken dish look like it has been prepared by a professional; simply take a chicken breast and slice a pocket on one side. Fill with mozarella and basil, then cover the slit with a small chicken fillet that has been pounded flat. Place the chicken on strips of parma ham and roll until completely covered. Lightly fry, grill or griddle to seal the meat, then place in the oven. When cooked, cut off the ends and cut the rest of the breast into four round, slices.
Perfect Presentation
§ Get creative with a peeler to produce vegetable shavings that can be fried to give crunchy, colourful toppings to your dishes. Use carrots for bright oranges and cabbage for luscious greens complementing an array of dishes.
§ Food looks most effective when it is built up on the plate – think 3D when it comes to presentation! Part boil new potatoes then gently fry. Place in the middle of a plate and use as a stand to put the chicken on. Then add your crunchy toppings for extra height.
A really interesting way of giving an extra visual dimension to the plate is creating an ‘essence’; blend brightly coloured fruit or vegetables and boil down into a syrup – then drizzle it around the plate for stunning and professional finish.
§ For finishing touches decorate the top of your table using banana leaves or pin chillies to the hem of your tablecloth. Another tip is to heat up spices in warm water to give your room a wonderful aroma.

NATIONAL PRIZE VEGETABLES STAR AT THE DORSET COUNTY SHOW
The National Vegetable Society will be holding its annual Championships at The Dorset County Show this year (5-6 September ).
Prize winning vegetable entries represent years of vegetable growing experience and months of work to reach show standard. Not surprisingly, competition is friendly but fierce for the top vegetable awards, including the Banksian Medal, the Silver Medal and the highly coveted NVS Silver Salver which is awarded to the best exhibit in show.
The Championships are the highlight of this year’s Dorset County Show. The National Vegetable Society is the undisputed expert and promoter of vegetable growing and eating – from the oldest vegetable varieties such as the cucumber which dates back to 200BC, to the newest such as Morning Star and Evening Star celery. The Society’s aim is raise the standard for vegetables at all levels, from shows in the local village hall to internationally renowned exhibitions such as the Chelsea Flower Show.
Visitors to the Dorset County Show will be able to see the stunning display of prize winning vegetables in the Society’s marquee and to learn more about growing their own. Vegetable experts from the Society will be on hand to answer questions about growing vegetables, including selecting the best varieties and troubleshooting pests.

If you’re getting ready for a dinner party, you can prep your veg in the morning, put them in iced water and they’ll stay fresh all day.
Potatoes have more vitamin C than oranges but it’s under the skin so don’t peel your spuds or the goodness is lost. Scrub with a brush and cook them in their skins.
Hate the smell of cauliflower cooking? Two bay leaves in the steamer act as an instant air freshener
Steam, don’t boil your vegetables as most of the nutrients will be thrown away with the water.
Cooked carrots are more nutritious than raw as more trace vitamins are released by cooking.
Sprouts on the stalk will stay fresher than those purchased loose.
Sprouts get a bad name but early varieties like ‘Cascade’ or ‘or ‘Oliver’ have a delicious flavour, unlike anything you can buy at the supermarket.
Perpetual Spinach can be cropped all year round and has a much milder taste than other spinaches. It’s actually a member of the beet family.

Wonderful walls
Use your walls to create surprises - build excitement with over-scaled images or unexpected accent colours. Something lots of people forget is to hang art at the right height – people often hang their pictures too high. You should be able to look at a painting without titling your head upwards.
Remember that whatever colour or texture is chosen for the walls, the ceiling must blend with it. If you use paint on walls, use the same colour on the woodwork and ceiling – it’s like wearing black tights and black shoes with a black dress.
De-clutter
Nowadays, the kitchen is often the main family living space, so you need to make the space accessible and ensure all the elements in it are practical. Be disciplined about not cluttering the kitchen with items you are unlikely to use; remember that you need a space that not only looks great but that is easy to maintain.
Don’t forget internal storage solutions as these will allow you to maximise your kitchen and reduce clutter and the amount of ‘dead space’. Quick and easy upgrades

Last Thursday, Her Majesty Queen Rania Al Abdullah of Jordan, FIFA, Gary Lineker and footballers from across the globe launched 1GOAL: Education for All, a FIFA World Cup 2010 initiative focused on ensuring that all children receive an education.
1GOAL has one purpose: to ensure that the 75 million children out of school in Africa and the world’s poorest countries get access to classrooms, teachers and the future that education provides. 1GOAL calls on football fans to sign their names at http://www.join1goal.org and tell world leaders that education beats poverty.
“I’m proud to support 1GOAL; it isn’t asking for money, it’s asking for your name, your commitment to fair play for future generations,” said Her Majesty Queen Rania of Jordan. “It’s about reminding world leaders to play by the rules and keep their promises to children of the developing world. I think that’s worth signing up for.”
Players from all over the world are joining the effort including Rio Ferdinand, Thierry Henry, Robinho, Michael Essien, Aaron Mokoena (captain of the South Africa team), Kanu (captain of the Nigerian team), Nicolas Anelka, Michel Silvestre, David James, Kolo Toure, Javier Zanetti, Ivan Cordoba, Michael Owen and Mia Hamm (captain of the 1999 American women’s World Cup champion team). Retired champions also joining 1GOAL include Marcel Desailly, George Weah and Roger Milla. Today’s event was hosted by England football legend Gary Lineker.

FIFA is pleased to do our part in helping every child to get into a classroom and grow up to be a doctor, teacher, parent or maybe even a football player.
“The World Cup 2010 can be more than a great tournament,” Addiechi continued. “This World Cup can leave a lasting legacy for African schoolchildren. FIFA is asking football fans around the globe to sign up to 1GOAL and give all kids the education they deserve.”
Leading players also strongly support education for the world’s poorest children. “I believe every child has the right to an education and that’s why I’m supporting 1 Goal and asking football fans around the world to join today,” said Rio Ferdinand.
“I am firmly backing 1GOAL in their effort to make sure every child receives an education,” said David James. “I have travelled to Malawi and I have seen the power of kids in schools. When people get an education, they can start to provide for themselves and their families.”
England football legend Gary Lineker said, “We know that education beats poverty. 1GOAL is bringing together fans around the world to demand education for all. This World Cup is a moment for us to shine.”

This ambitious Wembley showpiece fixture hopes to beat the current world record for attendance at a domestic rugby match. This was gained at a rugby match of 81,000 for the 2009 Heineken Cup semi-final between Leinster and Munster at Croke Park, Dublin. The capacity crowd for the Saracens vs. Northampton match at Wembley will be 91,000.

AMERICA’S EMERALD CITY NAMED GREENEST
Seattle, America’s emerald city, has been named the greenest and most sustainable city in the whole of the US.
It beat 655 other cities to top the survey carried out by leading environmental group, the Natural Resources Defense Council (NRDC).
Seattle was praised for its commitment to environmental issues with the NRDC citing that 90 per cent of the city’s power is generated from hydroelectric plants, which helps to keep air quality high.
It also highlighted that in 2005, Mayor Greg Nickels launched the US Conference of Mayors Climate Agreement to encourage US cities to meet the goals of the Kyoto Protocol, since its inception over 900 American cities have signed on.
During the survey destinations were judged on numerous factors including air quality, green buildings and space, energy production and conservation, recycling, transportation and water quality.
Seattle is at the forefront of minimising its carbon footprint and has created two global warming initiatives, Seattle Climate Action Now and Seattle Climate Partnership which have included schemes to reduce car use and improve energy efficiency in the home.
After Seattle the 14 top ranking cities in the NRDC study were San Francisco, Portland, Oakland, San Jose, Austin, Sacramento, Boston, Denver, Chicago, San Diego, New York, Los Angeles, Dallas, and Columbus.

UK COMPLEMENTARY HEALTHCARE REGULATOR OPENS REGISTER TO REFLEXOLOGISTS
The Complementary and Natural Healthcare Council (CNHC) opens its register to reflexology practitioners which means that members of the public will be able to choose their registered reflexologist in the knowledge that they meet national standards of conduct and competence.
Launched with government backing through the Department of Health who recently said, ”if patients choose to use complementary or alternative therapy, the Government’s advice is to choose a practitioner registered with a reputable voluntary registration body such as the CNHC”, the register opened in January 2009. Members of the public who use complementary healthcare will for the first time be able to verify that their reflexologist is registered with the first UK wide regulator.
The voluntary register will open over the course of this year to a wide range of complementary and natural healthcare practitioners. Reflexology is the fourth discipline for which the register has opened this year, joining massage therapy, nutritional therapy and aromatherapy.
By registering with the CNHC, reflexology practitioners will be seen as meeting the ‘gold standard’ within their field and will be entitled to display the quality mark which is given to practitioners upon registration.
Maggie Dunn, CEO of the CNHC explained: “We are delighted that CNHC is today opening its register to reflexology practitioners. Members of the public who use or are interested in using reflexology will be able to check whether the practitioner they’re seeing is registered with the CNHC.”
Continues Maggie, “Public safety is paramount and it is vital that practitioners meet the CNHC minimum standards of qualification and/or experience and in addition, they are signed up to a rigorous code of conduct. Not only will people looking for a reflexologist have peace of mind but practitioners too will benefit through increased public confidence”
Reflexology is the physical act of applying pressure to the feet and hands using a variety of hand techniques. It is based on a system of zones and reflex areas that reflect an image of the body on the feet and hands. Reflexology practitioners believe that such work may bring about a physical change to the body, or improve general health.
Throughout the rest of 2009, the Register will be opened to further disciplines, as they become ready and wish to register, and include: Yoga therapy, Shiatsu, Alexander technique, Bowen technique, Cranial therapy, Naturopathy and Reiki.
