Step one – Cheese & Wine Tasting
Foodhall Specialists Andy Evans and Lisa Wilkins will host a cheese and wine tasting session in the Foodhall - an emporium for food lovers. Customers will learn how to match five wines and five cheeses, expertly chosen by the Foodhall Specialists. For example, Moody’s Rosary Ash, a fresh and lemony English goat’s cheese with Chapel Down’s Bacchus, a floral, citrusy English white wine. Or Gabrial Coulet’s Petit Cave Roquefort, a salty blue cheese from the South of France paired with Château Jolys Cuvée Jean 2007 Jurançon an oak aged sweetie made with the unheard of Petit Manseng grape from vineyards in the foothills of the Pyrenees. The focus will be on the rules of table setting, creating atmosphere and crafting a stunning centrepiece.
Step Three – Dressing the tree
Natasha Friend, John Lewis Visual Merchandiser, will then make the final stop – in the John Lewis Christmas Shop. Customers will learn how to dress their tree in a key seasonal trend – Nordic. With red and white snowflake cut-outs, fabric baubles, wooden hedgehogs and stitched mini-stockings a cosy, warm Scandi-chic feeling will be created in your home.

THE WORLD CHAMPION CHRISTMAS CHEESEBOARD
Bob Farrand, chairman of the Guild of Fine Food which organises the World Cheese Awards, recommends a cheeseboard selection that will end every festive meal on a high – each one a World Champion at the World Cheese Awards.
West Country Farmhouse Cheddar PDO – this last won in 2000 but still earns its place on the board. I would opt for an 18-month-old Quickes, Denhay or Montgomery. All are full of rich creamy summer milk, firm bodied and bursting with long complex flavours. If your table is populated with under 35’s, the two-year-old 1833 from Barbers will please.
Old Dutch Master – won in 1999 when it was a Dutch unknown called Kolluma. At 18 months maturation, its warm fudgy notes please everyone around the table.
Le Gruyere AOC – the only cheeses to have taken the title on three occasions (1992, 2002 and 2005) and has been in the top 15 every year for a decade. It must be a 16 month matured ‘Premier cru’ or ‘Cave Aged’ for a long, nutty finish.
Ossau Iraty PDO – the 10 month matured unpasteurised sheeps’
Pyrenees cheese that grabbed the title in 2006 was a stunningly complex Ossau from Fromagerie Agour. A star performer, it took Super Gold again this year.
Camembert Super Medaillon – this superbly balanced, creamy camembert from Isigny took the Championship in 2001 and is a real crowd pleasing alternative to the PDO Camembert de Normandie.
Brie de Meaux PDO – won in 2007 and confirmed itself as one of the world greats. Brimming with rich, earthy, grassy notes, it has earned its a place on any board.
Shropshire Blue – no one had heard of this orange blue from Stilton country until the Cropwell Bishop version took top honours in 1995. A lusty alternative to Stilton – or even an addition.
Cornish Blue – the 2010 World Champion, our first for a decade and a real star. Created originally for the ladies by an ex-rugby player, is offers egalitarian qualities for all cheese lovers.

To launch the service, Christopher had made some matching recommendations for the festive season ahead;
· Firstly, Champagne is an excellent drink to start the festive day and the perfect accompaniment to present opening. Charles Heidsieck Brut represents an excellent choice, fit for any special occasion.
· Prawn Cocktail Starters:
- As freshness matters, I will keep my palate alive with a Riesling. Lots of Countries offers their variance on the subject, but I will go, myself, to Germany, the Mosel region-west of the country.
Also, an alternative could be the Kamptal region of Austria. Both regions can provide with enough vibrancy and lemony flavours to lift the prawns’ texture and also balance the sweet tone of the cocktail sauce.
I would go for Kabinett or Spatlese level, even with Qba (regional quality) as 2009 vintage, provided with great ripeness and a real “slate stone” acid balance. Haag, JJ Prum, E. Muller are amongst good winemakers/estates in the region. Austria’s Schloss Gobelsburg Riesling Gaisberg or Alte Reben would deliver the same type of pleasure in 2009.
· Traditional turkey with the trimming as main course:
- Following Hugh Fearnley-Whittingstall’s recipe; the Turkey is stuffed with liver, more meat and some veggies. I like to have two reds to offer on the table (usually large) one Italian and one new world Pinot Noir. With pronounced acid core and ripe Cherry fruit: Barbera d’Alba is usually my choice, to provide enough bite and structure with that very tender meat and the sweetness of its trimming (Oven cooked root vegetables-parsnips, sweet potatoes, sweeds and potatoes; sprouts, chesnuts…). The wine does balance all those forest and roasted flavours with its sweet texture and keeps the palate lively with a great acidity.
- The Pinot follows the same scheme but with more sweet fruit, more viscosity within the texture but also a different flavour profile: I like New Zealand’s Otago wines such as Felton Road, Carrick, Peregrine, Mt Edward, Rippon, Mt Difficulty&hellipor from Australia’s Victoria: Mac Forbes Yarra Pinot Noir. They offer that typical rich-intense Pinot Flavour of “bonbon anglais” as the French call it; black fruit scent and spices. The delivery tends to melt completely within the moisture of the meat and the roasted flavours of the root veggies. Delicious.
· Chocolate Yule Log dessert.
- I love port! Colheita is for me the treat, as Vintage needs so long to mature and are usually much rarer. Colheita therefore offers both advantages: Vintage (have to be mature for 7 years before release) and easier to approach as they are Tawny based. Good Port brands often produce great Colheitas.
- With chocolate based dessert, what is needed is to support the acid spectrum (as we always like our dessert VERY sweet) and also look after that bitter finish that chocolate provides. Colheita port will bring the acid balance into the match, and those plumy-cocoa-mocha flavours offer a sense of warmth on the palate evolving toward the end with a sweet bitterness that helps the chocolate with carrying its own flavour profile for longer
TOY TYCOON AND FOUNDER OF WOW! STUFF, RICHARD NORTH, NAMED HSBC’S UK BUSINESS THINKER 2010 IN HONG KONG
Founder and CEO of innovative toy company Wow! Stuff, Richard North, has been named HSBC’s 2010 UK Business Thinker in Hong Kong. North was awarded a financial reward of nearly £200,000 and a guaranteed £5m in lending, which will further enable the Wolverhampton based company to expand into Europe and the USA, as they aim to achieve sales of $500m by 2015.
Launched on 27 April 2010, the prestigious HSBC Business Thinking awards are a new initiative from the bank to help support and fund the UK's most innovative and forward-thinking companies. Businesses with turnovers in excess of £2 million were asked to put forward their company vision and ambitions, as well as how they intend to achieve them using the prize money. It was North’s inspiring vision for capturing the international toy market that impressed HSBC’s judges.
North said:
"HSBC's Business Thinking was an intensive programme. Hugely successful and entrepreneurial companies, such as consumer brand Thatcher’s Cider and leading trade brands such as Quadralene had to present their businesses achievements to date and plans for the future. Knowing that at every stage of the process your business was being taken apart and scrutinised by HSBC and such qualified business leaders has made winning all the more fantastic and quite frankly breathtaking!"
The intensive judging process began in August of this year and involved initial written examinations from each entrant. Of the thousands of businesses that entered, 54 qualified for the regional finals and were sent on a Thought Exchange to one of three countries; China, Mexico or Turkey. North went to Turkey where he visited several successful businesses and met with their owners. Further presentations that followed saw serial entrepreneur North win through to the regional finals and go on to be one of 18 businesses to present to judges in Hong Kong at the finals. Six businesses made it into the last section of the knockout competition. At the eleventh hour, North decided to change his final presentation to talk about how Wow! Stuff had been created by a chance meeting with his two co-founders and shareholders Kenny McAndrew and Dr Graeme Taylor.
North said:
"The success of most companies rarely lies with the founder but with the founder’s ability to spot talent and then build and nurture a great team. When I met Kenny and Graeme they were selling a towel on a market stall. This wasn't a towel in the mould of any other; it was adding their humour to a boring product that caught my attention. One side of the towel was brown in colour and the other side was white. On the brown side was written Arse and on the white Face-risqué but appealing to anyone with a sense of humour! I wondered what else this duo had in their ideas portfolio and a meeting with them confirmed that they would make the perfect design team and great business partners. When I decided to incorporate this story into the final presentation, I borrowed some samples from our local Hong Kong office. The product provided a great opening to the judging panel and Lord Digby Jones was quick to spot that this was no simple novelty trick when I informed him that we had sold 1 million pieces to date.
Since then Wow! Stuff’s product range has advanced way beyond toilet humour and includes high-tech radio controlled toys and a brand portfolio that ranges from The Science Museum and Wallace & Gromit to Doctor Who and Britain's Got Talent. Wow's customer base is a who's who of premier retailers including M&S, Argos, Debenhams and WH Smith.
Wow! Stuff’s success has come from its highly rewarding work ethic, celebrating innovation internally and proactively encouraging its team to bring new creative ideas to the table. EUROPE’S FIRST BEN 10 ROLLER COASTER COMING TO DRAYTON MANOR THEME PARK
Ben 10, the smash-hit cartoon hero, is set to make the award-winning Drayton Manor Theme Park, near Tamworth, Staffordshire, his new home.
In a move that will delight tens of thousands of youngsters, Europe’s first ever Ben 10 roller coaster ride will open at Drayton Manor for Easter 2011, following an exclusive deal between the park and Turner CN Enterprises, the brand’s licensor.
Ben 10 is a hugely popular children’s programme, broadcast on Cartoon Network, which follows the adventures of 10-year-old Ben Tennyson, who is able to turn into a variety of alien superheroes, each with unique powers, thanks to his mysterious Omnitrix watch.
The exciting new roller coaster will be part of an amazing Cartoon Network Street, which will include a fully branded restaurant and shop, selling Ben 10 merchandise and products relating to other shows on Cartoon Network.
Children and their parents will get to revel in the world of Ben 10 even before they get on the ride with queue entertainment. Full details of the ride will be unveiled closer to the launch.
